Pâté with nuts

Here’s a flavorful recipe for nut pâté that’s both creamy and nutritious:

Ingredients:

  • 200g nuts (like walnuts, almonds, or cashews)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh herbs (like thyme or parsley)
  • Salt and pepper to taste
  • Optional: 1 tablespoon nutritional yeast for added flavor

Instructions:

  1. Toast the Nuts: If using raw nuts, toast them in a dry skillet over medium heat for about 5-7 minutes until fragrant. Allow to cool.

  2. Sauté the Aromatics: In a pan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the garlic and cook for another minute. Allow to cool.

  3. Blend the Mixture: In a food processor, combine the toasted nuts, sautéed onion and garlic, lemon juice, herbs, and nutritional yeast (if using). Blend until smooth, adding a little water or more olive oil if needed for creaminess.

  4. Season: Taste the pâté and season with salt and pepper to your preference.

  5. Chill: Transfer the pâté to a container and refrigerate for at least 30 minutes to let the flavors meld.

  6. Serve: Enjoy with crackers, bread, or vegetable sticks. Garnish with extra herbs or nuts if desired.

This nut pâté is rich, creamy, and packed with flavor—perfect as an appetizer or snack!
